Don't cut the hair off. It'll just become a big unmanageable glob
that is useless.
Follow Ashley's advice, even though he went back under his rock. If
the boraz gets moist, scrape it off and put on a fresh batch.
After the hide's dried out, cut it into smaller pieces - fold it with
the hair side out. Run a SHARP knife or box cutter along the fold
from underneath. You'll have nice pieces without having hair all over
the place.

I get a deer hide every now and then and once all the meat and fat
is off I wash it in luke warm water and washing up liquid ( find
this helps for later). I then nail the hide on a big board (or the
shed floor) and borax it.I don't use salt like I used to as this
soaks up the damp in the air.Do it as soon as possible or freeze it
otherwise you'll loose the skin.
