Check out Versus (VS) or the Outdoor Channel. Some fly fishing shows are:
Fly Fishing America
Familiar Waters (sometimes fly)
Fly Fishing Masters
Flip Pallot's Fishing the Keys
By "Big Game" I assume you mean blue water and billfish - there are some
shows on the above channels for that as well if you look around a little.
Another interesting show is Hunt For Big Fish on the VS channel - not
necessarily saltwater but they go all over the planet for some big, nasty
things.
