I like Walker's Cay Chronicles on ESPN2.  I've seen Flip fish for Marlin on a 
saltwater fly rig before.  I also watch the show because I'm very fond of the 
South Carolina low country (my wife and I were married in Charleston) and the 
commercials for Palmetto Bluff make me wish I was there.

By "Big Game" I assume you mean blue water and billfish - there are some 
shows on the above channels for that as well if you look around a little. 
Another interesting show is Hunt For Big Fish on the VS channel - not 
necessarily saltwater but they go all over the planet for some big, nasty 
things.
