Hi Eddie, Have to echo the sentiment here: chartreuse over white works for me. I fish in South Florida both salt & fresh. Same flies work in both.
For freshwater, specifically peacock bass & other cichlids, I have also found firetiger to work as well. Chartreuse or olive for the top, yellow for the middle, and orange for the bottom layer. Other colors I use sometimes include pink/white, tan/white, all white, all black, olive/white. But when I'm tying for a trip and have limited time it's always chart/white. :) Hooks, I like mustad 3407/34007's for salt (and deep freshwater), and 3366 for fresh.
