This feature seems to be meant to be used to convert an already  
compressed quicktime movie to a format that is compatible with the  
iPod. If you take DV video from iMovie or FCP and use the Movie to  
iPod feature it will mess up the aspect ratio of your video.

You can do that but there are lots of factors what will make or break  
compatibility.

It's actually a fairly high bit-rate h.264 setting. Looks good but  
not particularly small file size.

Don't know.

Maybe the most compatible settings that work on the iPod and play in  
Quicktime 6 are the ones at Freevlog - use the iMovie tutorial at  
http://freevlog.org/#compress
That will make a decent file that will play in QT 6, 7 and on the  
iPod. You should also be able to add any other features of qt that  
you want - poster frames, text tracks, href tracks, chapter tracks, etc.
