I do not remember such feature (changing the icon set). The only preference is in the "TrackWaipoint layer", where you can select the size of icons. Mark, as I remember, you are using Ubuntu. Perso, I'm running Ubuntu Network Remix and I noticed that the viking package is 0.9.8, quite old now.
