They do, except for the "basic" vim:

$ apt-cache showsrc vim | awk '/ deb /{print $1}'

Although, I can see that being harder to find if you don't have deb-src
lines in your source.list, since all the vim addon packages are named
vim-$addon.

That may be something I should address in the addon policy by using
vim-addon-$addon (or something similar) instead.

Any package other than vim-tiny provides that.  The vim-tiny package
exists solely to provide the vi command for base installs.  It's not
expected to be used by most people on a daily basis.  The other packages
are.

Then you're likely only looking at a list of what you have installed,
rather than what is available.
