The whole damned subject line looks like this on my Mac 8500 running OS 9.1 > Subject: =?UTF-8?Q?Re=3A_=EF=A3=BF_APPLES_IN_THE_SUBJECT_LINE?= List-Id: <vintage-macs.googlegroups.com> is the header to filter on. That's what it's for and Google has that one right even though I really wish it wouldn't wordwrap postings in a "helpful" way. Apple Mail surely has a way to filter on a named header. If not it ought to be replaced. Eudora, even if no longer supported, can handle it. I know Apple doesn't want users to understand. It IS, damnit, possible to view the message source without interference by "helpful" user interface stuff.
