If you have the room to attach both drives to the Windows box, you could use the Basilisk II Mac emulator with a ROM from the Performa, and then configure both drives for direct access in B2. Then it'd simply be drag and drop. Alternatively, you could get the target disk booting in the other Mac with an OS install, then copy everything via networking, then swap the System Folders to end up with effectively a cloned disk.
