    Yes. 8 bit greyscale is standard. Even a 24 bit video card will 
not use more than 8 bits for greyscale. 8 bit is all that's necessary 
for 256 shades of grey, since the video card will simply fire all 3 
guns (red, green & blue) at the same level.
   24 bit colour still uses 256 levels. But, it uses 8 bits for the 
red gun, 8 for the green & 8 for the blue. (256 X 256 X 256 = 
16.something million)
   16 bit colour uses only 64 levels of fire for each gun. Though a 16 
bit card will switch to 256 levels (8 bit) when in greyscale mode.

    There may be some professional video cards for video and/or 
graphic arts work that will use more than 256 levels. But, they're 
not consumer products & you'd pay $$$ through the nose for them.

    256 shades is quite subtle. Using PhotoShop, set the background 
colour to red=128, green=128, blue=128. then create a new picture 
with that as the background. Then set your foreground colour to 
red=129, green=129, blue=129. Take your pencil or brush & draw a 
picture or pattern... Save the picture, then set it as a desktop on a 
machine with 24 bit colour... See if you can see your pattern?
