I've successfully used FWB RAID Toolkit on my 840av. I built an array using 2 8GB U160 drives hangin' off a Jackhammer. I'd do it again but I struggle to find anywhere to put the Boot drive (on the internal bus) as the 840av only has 2 drive bays!
Ah! When I started this project I imagined having the two wide HD's on the 68 pin cable of the Jackhammer on their own. I was hopping to create a striped volume, then put a system folder on it, and be able to boot from this striped volume. I thought that would speed up the system. Is this never going to be possible (you say you needed a boot drive)?
And you are using RAID Toolkit to create the Stripe?
I don't have FWB RAID toolkit, I have the latter Hard Drive Toolkit 3.0.2 which includes the ability to create either a stripped (RAID 0) or mirrored (RAID 1) volume. I got this version because I understood that it was the last one that would support my 68040 / OS 8.1 Quadra 950.
What version of the JackHammer control panel are you using?

Is there only supposed to be a control panel? No extension? Does anybody have any manuals for the JackHammer?
Which slot is the JackHammer installed in? FWB recommended the leftmost or farthest left.
Err..... left? It's in slot E which is the one just below the power supply or to put it another way, the uppermost one. My cable will only stretch this far so I hope thats OK.
Make sure that you are not duplicating ID's, like having a drive on the internal bus set to "0" and one on the Jackhammer set to "0". While I understand that you should be able to do this for the sake of troubleshooting it is one less thing to have as a potential problem.
You also may need to have an active terminator at the end of the cable in order for those Wide drives to operate correctly.
OK, so last night I changed my two wide drives to ID 1 and 2. I also switched the termination from "get power from SCSI bus" to "drive supplies term power". No change in behavior. I must say I was wrong in my description of what happens when you try to restart after creating a stripped array: I DO get a "bong", then a grey screen with the mouse pointer, but then it just stays that way. It's still the same with different SCSI id's and termination.
It is also suggested that you zap your PRAM.
It doesn't get that far :-(
