Those instructions would only apply to newer Apples running OS X. There is no single user mode, nor text command line at all on those LCIIIs. If you're getting a login prompt on them, I'm assumimg it is the mult-user software that many schools used on their Macs(of course, the name is eluding me right now). I think it runs as an extension, in which case starting up while holding the shift key should get you past it(although that doesn't sound so secure, so maybe they figured out a way around that). Once you are booted into the thing, you need to click the Apple menu, select Control Panels, and select Extension Manager. You can then turn off the extension for that software. For good measure, you may just want to find its folder on the hard drive and delete the whole thing so you're sure it never bothers you again. The only "vintage mac-ing" I've been doing lately is running an SE30 as a terminal to a server, so my directions above may be a little rusty.
The command key is the official name for what most of us former Windows users refer to as the Apple key. :)
You may want to download the floppy images for OS 7.5.1 (or whatever version is available on the net if that's not it) and reformat and reinstall all three. You'll be sure that everything is in working order that way, and it will give you a chance to learn the Mac before they call to ask you questions. :) You can find some good software for these at Gamba's House, as well as some different versions of the OS: http://home.earthlink.net/~gamba2/index.html
The only catch is creating those Mac floppies on a Windows machine. There may be a utility for that, but someone else here will have to help you with that one. If you end up needing some help with the floppies, email off list and I can possibly make you some.

I did a search on the internet and found instructions to reset Root passwords. That procedure involves holding "command-s" during the boot process and getting into the text based single user mode.
