I've had luck dropping the jack all the way down, then lifting the back
of the motor until the flywheel or heater boxes rest on the ground -
then pulling the jack out and letting the engine down again. You might
need to put blocks under the front of the engine or heaters to gain
enough height. Rock the engine back to get the blocks out.
Having two jacks is another solution. I've got one from Wal-Mart that is
an "SUV jack" that lifts higher than most cheap jacks, that I use to
lift the car off the engine.

Two solutions that I know of are....
1. Remove the headers - I don't like this because exhaust nuts & bolts are
a PITA.
2. Use higher/more blocks of wood to support the engine. With this method, I
will have to raise the car a bit higher and/or might have to remove the
shroud, carb, etc...
I'm likely to do #2 first then if it doesn't work I'll do #1 but.........
