Hey there, Answering the questions I can: You can't seem to interupt the spoken options for a command, even if you know what you want. You must be in the app in order for it to recognize/respond to your command -- it won't work if it isn't open. I also have to turn VoiceOver off, otherwise the narration interferes with what the program recognizes. Running an iPhone 4, I have no speed problems with the phone but I don't think it helps you much. I also don't think there's a way to edit your message apart from the Try Again command, which is actually quite frustrating at times.
