Why do you want to change it?  I did have mine set to touch type at first but I 
have now learned how to use the split tap method to type and I must say that 
for me it is much faster.
        Make sure that you have an edit field ready to accept typed characters 
or a better way of saying this is to make sure that the edit box is active.  
Then do the rotor gesture.  You do this by pretending that you are turning a 
knob.  Keep your thumb and index fingers about a half inch to a inch apart and 
be turning the make believe knob.  You should hear Voice Over say " Characters, 
then Words, and keep going until you hear Typing Mode".  Once you hear Typing 
Mode do single finger flick down to change from Standard to Touch typing.  
After you do this make sure that you then move your rotor from Typing Mode to 
any other item in your rotor, otherwise the next time you do down flick you 
will change it back to Standard typing.
