Hi Kevin, I had some trouble doing this too, but here's how I finally accomplished it. This is on the 4s. I don't know if it would be different on other phones.
First locate the contact you want to delete. Next double-tap the Edit button which you will find in the upper portion of the screen. I can't remember if it's toward the right or left, but it is definitely at the top. Move to the bottom of the contact info. You can do this by tapping with four fingers near the bottom of the screen. Double-tap the Delete button, which is the last element on the screen and is located at the very bottom. On the next screen you should find a delete contact button and a cancel button. Double-tap the Delete Contact button to remove the contact. Return to your contacts list and the contact will be gone. I hope this helps.
