I tried MScribble a few months ago on a friend's iPhone and it was relatively inaccessible, but it did seem fun so I looked at it again a few days ago. The current version is totally accessible and even more enjoyable than I remember. I find it mildly addictive.
The app is free and with the download you get several music themes. You can purchase an additional 3 music packs for 99 cents each. You select the music theme, background music volume, and one of four sounds for your instrument. Press play, and turn off Voice Over. By scribbling on the screen, you can adjust the volume and pitch. Keeping your finger still will play different notes in harmony, and tilting the iPhone will give you vibrato for the current note. For each music theme you may want to try the example button to get some ideas of things that may sound good. You certainly do not need to be any type of musician, but I found I get better results if I concentrate on the beat and I closely follow the background music. You can save and share what you create.
