Further to Jennie's explanation, if you're in a text editor like draftpad and you want to select the entire text you've just typed, there is a select all option on the edit menu of the roter. Just double tap select all then flick to copy and double tap. The phone will say something like "text copied." You can then go to another app and paste the text you've copied.
I'm not very practiced at the pinch gesture so this is what I do when I want to copy text from one place to another.
