Are you just talking about iPhone apps? I'm relatively new to the iPhone, but on the PC, I can think of quite a few apps that let you try it before you buy it. Trialware can time out after a certain period of time or number of uses. It can have limitations, such as only working with 30 seconds of audio or sometimes you just need to pay for an upgrade to get additional features. Like I said, I'm new to the iPhone, but the only app I've seen that does something like this on the iPhone would be VoiceBook VO.
I could see making a free version available that would only let you type into it but wouldn't let you copy the text anywhere or send a message or an email. This would at least give you chance to practice typing with it to see if you want to plunk down the $15 or not. I know I'd take advantage of such an opportunity myself.
