The other option is to locate the button that takes the picture, turn Voiceover off, do what the app suggests in terms of positioning the camera, then finally, pressing the button the one time to take the picture.
Once the picture is taken, you can then turn Voiceover on again, and you’re ok. I’ve done this a number of times with some other apps for OCR, and it worked well.
