Selecting text that isn't in an edit field is a quirky process. There are a couple of workarounds if selecting it directly doesn't work. You can try hitting reply and then the text will be editable, making it a bit easier. You can also have Voiceover read a chunk of text, then use the copy last-spoken text to the clipboard command, three-finger-quadruple-tap to copy it. Note that this last method will also copy the Voiceover hint, as well, as in "selected" or "edit field", so you'd have to clean that up once you paste it somewhere else. Sometimes, without using the rotor at first, you can use the pinch gesture to select some text, then go to the edit field and continue. It's kind of a buggy process all the way around, unfortunately.
