As I understand it, restoring an iPod backup would only work on an iPod. Since 
this is an iPhone, a full restore might not go well. You can use iTunes to put 
back any pictures, music, ringtones, books, and other content, but I'd 
re-download all your apps. I could easily be wrong about this, so you may want 
to wait until someone else chimes in. You could also call Apple's regular tech 
support number and ask them. While I doubt your phone will have Apple Care, you 
can explain that you bought it used and are just trying to set it up, and could 
the tech please answer one quick question. Being nice to them and stating your 
question first normally works well. For instance, "I know I don't have Apple 
Care on this phone, but I'm just trying to set it up for the first time and I 
wondered if I could restore my iPod backup to it without any problems." Apple 
Support is generally really great, and I've even had techs run remote 
diagnostics or spend twenty minutes with me, despite my lack of Apple Care.

Yes, iMessages are data, as are FaceTime calls. Regular text messages are not 
data, and you'll have to check with your provider to see how many of those you 
are allowed.

It will always use wifi so long as it's connected. You can set apps to use 
cellular data in Settings > General > Cellular. Most apps also have settings 
where you can set the cellular behavior, such as only refreshing on wifi or 
only downloading podcasts over wifi.

I think so, yes. Nokia might have a tool to export everything, but I'm not 
familiar with that or with the model of phone you're using.
