iMessages can be sent over WiFi and do not count toward your data when you are on WiFi. And, iMessages do not count against your text message count if you don't have unlimited texting. I do not think restoring from your iPod backup will cause any problems and if you do, the apps will likely be arranged the same way you have them now on your touch. I did that when I got my first iPhone and replaced my iPod 5th Generation. Once you have things set up, go through the settings and look at the settings that are different than the iPod Touch. In particular, the cellular settings where you can limit what apps use cellular.
