Hello Marie and Everyone Who Replied to my Question: Thank you all for reminding me about the Speak Screen feature.
As it turns out, in iBooks, at least, Speak Screen results in two different scenarios, the second of which is exactly what I want or, more accurately, reflects the scenario in iOS 7.x. Marie, as you stated, if one first places focus on the Status Bar before initiating the feature, the Speak Screen dialog box appears, reading commences with the specified voice, rate, etc. However, if, after enabling the Speak Screen feature, in ibooks, one merely places focus anywhere in the actual text, then performs a 2-finger swipe down, continuous reading will commence in the same way it did in iOS 7.x.
