Hello Marie and Everyone Who Replied to my Question:

Thank you all for reminding me about the Speak Screen feature.  

As it turns out, in iBooks, at least, Speak Screen results in two different 
scenarios, the second of which is exactly what I want or, more accurately, 
reflects the scenario in iOS 7.x.

Marie, as you stated, if one first places focus on the Status Bar before 
initiating the feature, the Speak Screen dialog box appears, reading commences 
with the specified voice, rate, etc.  

However, if, after enabling the Speak Screen feature, in ibooks, one merely 
places focus anywhere in the actual text, then performs a 2-finger swipe down, 
continuous reading will commence in the same way it did in iOS 7.x.

Again, thank you all.  I couldn't have done it without you.

Using the speak Screen function will let the book continue when the screen 
locks. First turn it on and select the voice you want to use and the speed in 
Accessibility setting under Speech. then when in an IBook, first touch the 
status bar and then do the two finger swipe down to begin reading or use Siri 
with the command "Speak Screen"

When I perform a two-finger swipe down to initiate continuous reading in 
iBooks, on my iPhone 6 Plus running iOS 8.2, I discovered that reading stops 
when the display auto-lock kicks in.

In iOS 7.x, this did not occur as, regardless of the system settings, the 
display would remain on during continuous reading.

Unless there is a workaround, in order to prevent iBooks continuous reading 
from being interrupted, in iOS 8.2, I have to first disable the Auto-Lock.

Am I missing something?
