I'm writing this message using a Logitech K810 Bluetooth keyboard.  The device 
I'm using is an iPod Touch running iOS 7.x.  The Touch is in another room 
plugged in and charging.  It is about 20 feet away from where I am sitting.  
I'm also wearing a Bluetooth headset so that I can hear VoiceOver.  I can not 
detect any lag between what I am typing on the keyboard and what I am hearing 
through the headset.

As others have said, normally you do not have to pair the keyboard again just 
because you've turned it off and then back on.

I do not carry a Bluetooth keyboard around with me, but if I am near one I am 
more likely to use it to access the iPod Touch than I am to use the touch 
screen. This does not mean I have anything against using the touch screen, it 
simply means I use whatever is most effective at the moment.

I do not have the latest hardware, and rarely use my iPod running iOS 8.3, so 
can not say from personal experience whether the latest iPhones running the 
latest iOs have any problems with Bluetooth in general, or Bluetooth keyboards 
in particular.
