I personally like Gigdaddy as a multi-track recording app on the iPhone. It is VoiceOver accessible and you can record one track, then listen to that while you record a second track, then a third and a fourth, then you can mix that down to a stereo recording, and if you want to get extra complicated, make that track 1 and add three more, etc. It costs $2.99.
