You can always do a double tap and hold and then slide your finger up or
down if you want to adjust your speech rate more finely then you get
with the 10% adjustment by flicking up or down. With this, I think the
10% default adjustment with the flicking up or down is a good default.

I noticed that there is a difference in the increment with which you can adjust
the speed of voices. In the rotor, it is 5%. When you're in the voiceover,
speech, specific voice adjustment, it is 10%. I wonder why that is. Certainly
10% is often too much, especially with foreign languages.
