Apps which sync data to iCloud typically have a setting within the apps settings which allow you to govern what or if any data is synced. These apps may have the settings either with in the app or under the app name in the iOS settings app. You can check out exactly which apps have data synced to iCloud by going into Settings > iCloud > storage and backup > manage data.
