You need to tap to get the cursor at the beginning of the text, then when you 
dictate the old will be replaced with the new.

In my case I tried dictating and, after shaking the phone for undo, I selected 
the button for and doing dictation. However all the text that I had previously 
dictated remained in the edit field. Sounds like a bug to me. I will reported 
to Apple.
