What I do is tell Seri to "add to my calendar Lunch with Don". It then prompts me for date and time. However, it names the appointment some odd combinations, such as "lunch with (a Don in my contacts)". I have to tell it to change title, then confirm everything. An extra step, but it always seems to mess up what I am scheduling the first time through.
