I am not familiar enough with the issues around hearing impairments and why having a 3.5mm headphone jack is important although I am sure that if Jonathan says it is then there are very good reasons.
Strictly from a headphone availability perspective one thing is almost certain and that is that we'll see a ton of lightning cable headsets in a very short time if Apple really goes ahead with this. The accessory market for Apple products is just too big for all the major players not to jump onto this bandwagon.
