I am quite certain that if the developer implements this correctly, that a 2-finger double tap when the app is open could be made to pause and restart recording.

Indeed the pause gesture is very unreliably. It worked perfectly in iOS 7, but something changed in iOS 8 and now it doesn't work well. We're looking to change the pause gesture to a two-finger double-tap when VoiceOver is enabled.
