Unfortunately I can only provide some suggestions. I believe somebody already said they also did this and had the same problem and that they deleted the folder and it still persisted. I was going to suggest that you move all apps out of the cooking folder so it goes away and that this may then solve the problem, but it would appear that is not the case. Nonethless I would try it, maybe just move your current folder to an empty home page, then open it and move all apps out to that empty home screen. When you are done close all apps and do a reboot of the phone, then put two apps back together so a folder is created, rename it the correct way and see if this fixes the problem. If not, I would once again move the apps out and get rid of the folder, then instead of doing a regular reboot by turning off the phone, do a hard reset by holding the power and home button together for about 6 seconds. After the phone reboots,create the folder again, rename it and see if that fixed it. If none of this works you may want to contact Apple Accessibility and ask if they know of a solution and, if not, send an email reporting this as a bug.

You can just open the folder, double tap and hold on any of the apps inside said folder and then find the folder name by swiping all the way left, double tap to get into the folder name edit field, then delete what's there and type in anything you like. If you want an app name to read differently you have to use custom labels, but folder names can be edited/renamed.
