For those who might encounter this same weird problem, it sorted
itself out after another day or so. Don't know if the problem was in
my phone or with the actual service that automatically syncs the time.

I wouldn't know what exactly causes the incorrect time, but one thing I
would have suggested is to let the phone dry out for at least 2 or 3 days,
recommended in such cases is to instantly make sure the power is turned off
(if it is still on) and then after shaking the water out of the phone to put
it in a bowl with rice as it absorbs moisture. If you are near an Apple
Store it might not be a bad idea to take it in and explain what happened,
the technicians can tell anyways if a phone had become wet, there is some
sort of indicator inside the phone which changes colour when it becomes wet.
