You can easily add the files of a particular folder to your iTunes music library, but I don't know of a way how you can add just those particular files to a playlist. You can create a Playlist and add songs to it one by one or add songs to any existing playlist, but I am not sure if it is possible to rearrange these songs later into a different order with the current version of iTunes
