As Christopher pointed out, if it is an iTunes gift card you go to the App Store app, tap on "Featured" at the bottom left (it may already be selected) and if you swipe left 4 times from there you are on the "Redeem" button. Tap on it and either use the camera to scan the gift card or enter the card's code to redeem it. This will add the card's balance to your account as credit. You then buy the app normally and any purchase amount will first come off your account balance before your associated credit card is used. For example, if you had a $100 gift card and added that to your account and you bought an app that costs only $80 you would use up $80 of your $100 balance and you would have $20 left for other purchases. If you only have a $50 balance and the app is $80 it would use up the $50 balance and charge the rest to your credit card. Keep in mind that whoever sends you the gift card has to be in Canada or at least the card must be a Canadian iTunes gift card. If somebody sends you an iTunes gift card from the US, it can't be used here.
