I use a method similar to what Sieghard described, but I use the Braille screen Input. The concepts are similar though since I write a letter, delete it, and am then told how many apps I have on my phone. I've never thought to look in About in Settings, and did not realize that that way leaves out stock apps. Interesting. Whether one uses handwriting or Braille Screen Input you can open any app on your phone, in or out of a folder, from any home screen. Pretty slick.
