I don't think it's stupid at all. Remember, I don't have an S7 Edge myself, so I'm just going by what I've read, what I've seen on lists and what my friends and relatives who have an S7 Edge have told me.

The curved edges give you a bit more real estate in the same form factor. The S7 Edge for example has a 5.5 inch screen while the S7 has a 5.1 inch screen and the dimensions are basically identical.

The Edge can be used a bit easier with one hand since you can place your favorite contacts and apps on the edges and reach them with the fingers of the hand holding the device. You can also have information sent to the screens on the edges, so for example, you could place your phone face down so you won't get interrupted with vibrations or ring tones but still see messages appear on the edges or have them change colors to indicate you have a call or a message from someone in particular. Samsung recently opened up the interfaces to the edges, so app developers can now think of all sorts of ways to take advantages of the edges.

Finally, it just makes the S7 Edge look and feel cool!

I'm not sure how much a blind person can take advantage of these features, but like I said, I'd expect an Apple implementation to be similar and accessible. Apple will also open this up to developers down the road, if Apple takes this path, and again you'll have innovative app developers coming up with all kinds of things.

Apple just took care of not being able to listen with wired
headphones and charging. For 49 dollars there is an Apple dock that
allows listening and charging. Saw it in Mac Daily News. I do not
know how to give a link, sorry.

Now, my simple thoughts about the roll out the 7 and 7 plus. Lots
and lots of visual improvements, but nothing said about Siri or
accessibility. Was disappointed, but just for the stereo speakers
and more volume I will take my upgrade.
