Once in the edit screen for the contact, find the number you want to change to the iPhone contact number. Swipe/flick left to the button for the type of number and double tap. You will then get a list of options, including iPhone, mobile, work, various fax choices, and other things. Double tap the item you want and then you will be taken back to the edit screen where you can add other information or hit the done button in the upper right corner.
