Apple has confirmed that even on LTE, Verizon and Sprint customers won't be able to access cellular data while they are on a call. If you're connected to WiFi, you can use that, but not cellular. This restriction also exists with AT&T, except that in this case it will fall back to HSPA+, so you'll still have cellular data access, just no LTE.
