Just ddouble tap anywhere, the language doesn't matter, it simply displays the Hello message in a number of languages which cycle around, this has nothing to do with the language your iPhone uses. If you doble tap on the messagee when it's in German it will still come up in English or at least go to a screen where you can select your country and language.
