I know that the SMS option on an iPhone is in Settings, Messages & swipe to Send as SMS, the default for this is "off", so double tap on it and it will be "on". The first option in this menu is "iMessage", "Read Receipts" is the next, followed by "Send as SMS". This should be the same layout for all Apple devices.
