What's your email client? I've heard people using Outlook have been able to add a note to their Notes folder and have it synced with their iPhone. I use Thunderbird, and this doesn't work for me. I'd suggest going with a cloud option. I don't use iCloud, but I do use Ubuntu One and Google Drive. DropBox is also wildly popular. One tool I use is Note Master Lite. It will let you read and edit documents in Google Drive from your iPhone, so I can update them with Chrome/ChromeVox on my PC running Ubuntu as well as with Note Master Lite on my iPhone. There are other options to do this as well which are discussed here on this list from time to time. Maybe someone else will chime in or you can look through the archive or see what AppleVis has to say on the subject.
