You change them on the Today screen, do a 4-finger tap to go to the very bottom, when I do this I land on the very last button which in my case says 12 new widgets available, if I swipe left I get to the edit button. Once you tap Edit you just drag them into the order you want by double tapping, holding and dragging on the “Reorder” button. Those you don’t want you drag down past the “More Widgets: heading or if your rotor is on actions you can just swipe up or down to remove and double tap. If you want to put any into the section which is displayed from below the More Widgets section you just tap on the “insert” next to the one you want.

You can just go to the Today screen and explore them, play around with them you can always change it again if you don’t like what you are showing or not showing.
