You describe two different issues; getting the cursor where you want it and then selecting text. Here is what I do.
1. I use the standard navigation set to sentence to get to the sentence where I want the selection to begin. I then confirm by touching the select text button and make sure it is starting with the first word. If it isn't, I flick up or down at that spot to get the cursor on the word I want. Then, double tap with one finger on the select text to begin selection. Then, in all my experience, flicking down with three fingers will only add one sentence at a time. After that first sentence, it will often speak everything you have selected which can make it appear you are getting more than one sentence. Remember, a sentence is defined by an ending punctuation mark like a period, question mark, or exclamation mark. Some authors do write with run-on sentences with lots of commas where someone else might have put periods...
