While I haven't experienced the particular scenario you described, I
have seen something similar when attempting to dictate a text while
using the wired earpods. The results of the dictation are completely
garbled and show no resemblance to what I actually said. I dictate on
my iPhone quite often and with a very high degree of accuracy except
in the scenario I just described.

Not sure what the common thread may be, but it's interesting to hear
that others are experiencing the same type of behavior.
