So I missed the important part. Waking up now.
1. Open messages.
2. double-tap on compose. Now you have a to-line, just as in an email.
3. Type in the name from your contacts and double-tap on it.
4. The phone will display a phone number and/or
email address for each contact with that name.
5. Double-tap on the one you want.
6. When the phone understands, flick right until
it says, "message; text field".
7. Double-tap on that, and it will say, "edit".

I've had similar issues, where texting from
contacts hasn't always worked. I'd also be interested in answers.
As for texting with Siri, I've not run into a
limit. And, if Siri stops before you're ready,
and when she asks if you want to sent it, say
"Append." She will then ask you what you want to add.
