Perhaps your contact turned off his phone? I believe it only goes I message if the receiver's phone is on. In the messages app, when I'm having a conversation with one of my contacts who also has an iPhone, iMessage is usually turned on, and I'll see some sort of indication that I'm sending using iMessage. However, we were having a conversation tonight on my way home from work and all of a sudden I was sending regular text messages. Why is that?
