Under the settings app, go into the wallet and Apple Pay section.  You should 
see a “transaction defaults” section and it should show the default card.  
Double tap on that and it should then give you a listing of all the cards 
available.  Select the one you want as the default, then you can tap back and 
you should notice the default card has changed.

No, Apple pay authenticates via NFC technology and the authentication takes 
place on your phone, no active data or WiFi connection is necessary, it will 
work even if the phone is in Airplane mode.

The only time you need an internet connection is if you are making a purchase 
on a website or in an app which supports Apple Pay, but then again if you 
didn’t have an internet connection you couldn’t be online, but at a store all 
is done on the device.

 

One more thing, Can I still use ApplePay when my phone does not have SIM in it?

Yes, if it’s just authenticating an apple Pay payment at a store you don’t even 
need a SIM in your phone.

 

Are Wallet and ApplePay two different apps, or ApplePay is the part of Wallet?

Apple Pay is not an app, it is part of Wallet and you need to set up new cards 
using the Wallet app and it is also in Wallet where you can go and review your 
transactions.

You definitely don’t have to give your phone to any clerk.

I never unlock my phone when I use Apple Pay. When the terminal is ready I just 
hold the phone near and it pops up. I also have a Visa and a Mastercard and I 
have my Mastercard set as the default. When I want to use my Visa I first 
double tap on my Mastercard, then I double tap on the Visa. I found this more 
reliable then if I only double tap on the Visa. Once I am done with that I put 
my finger on the Touch Id sensor and it’s done.

No, you do not need to unlock your phone first…

What I do is double-click for Apple Pay… Then before authenticating, you can 
change the card and then authenticate…

You also can set a default card in the wallet app… So, and they are you can 
make the one you generally want to use the default… Hope that helps…
