I just tested this and you are correct, it only read who the message was from, when it arrived and the subject. However, this is new, SIRI used to read the content of emails just fine and I wonder if when this started, might be worth reporting it to Apple feedback. Since this is not an accessibility issue I don't think it makes sense to report it to Apple Accessibility.
